Very ambitious guy (he does iron man competitions on his day off). I like what he has done to the SSC menu although some of his dishes overreach with the combinations; RedfishDirty farro, cucumber relish, charred tomato gelee, raspberry glazed sungolds, dillHe must have hired extra staff to push that menu out of the kitchen.
