Dinner at L2O

I thoroughly enjoyed the twelve course tasting menu at Laurent Gras's seafood restaurant L2O last night.    The lobster with the foie gras emulsion came close to surpassing the chimney smoked lobster at Arcadia, but in the end did not.  The wines were all delicious and poured with a generous hand.

Bravissimo! I, too, am jealous. John, give us some detail on the foie gras emulsion.

Looking forward to you duplicating this menu for our weekend visit.

Sol-

The foie gras emulsion was something between the consistency of a light mayonnaise and a foam. The flavor complimented but did not overpower the sweet lobster medallion that had been poached in butter.

Luxurious.
